The science behind why this works is because of the difference in electronegativity

between the electrodes. The aluminum has less of an attraction for its electrons

than the carbon, and so they move through the circuit from the metal to the carbon rod.

The ions in the water oxidize and reduce the carbon and metal electrodes, respectively, to maintain balance.

It works the same way that regular batteries do except it is using salt water for the electrolyte.

Since most water contains salts that is why this works with tap water.

This would not work with distilled water.
